CHATA’s SOUP: an I.AM.YOU. fave.
Step 1: Bring water to boil in a large pot. Start to chop ingredients as seen here.
Step 2: In a medium pan put 2 tablespoons olive oil, the chopped onion, and chopped tomatoes to sautee together. (optional: use a can of chopped tomatoes with no additives)
Step 3: Add potato, carrots, celery, zucchini, and broccoli to the pot of boiling water.
Step 4: When the tomato and onion combination is slightly orange and the onion is tender, add the contents to the pot of boiling water and vegetables.
Step 5: Season with salt and any other spices you like. Cover with a lid. And let simmer on medium heat for 20 minutes or until all vegetables tender.
Simple. No mess or fuss. Enjoy for lunch, dinner, snack.. you name it!
