KALE QUINOA PAELLA - The best of Spain with the best foods for your body!
-Sautee a medium sized chopped white onion in olive oil. If you like spice add a chopped jalapeno.
-While the onion gets soft blend or puree (blender or cuisinart) 2 cups kale, 4 zucchinis, 1 bunch asaparagus.
-Add the veggie mixture to the pan with salt and pepper.
-Let the veggies cook for 5-10 m.
-Add 1 Quart of cooked quinoa.
-Add 1/2 - 1 pint of cashews
-Stir well and let cook for 5 minutes.
-Serve and optionally garnish with fresh lemon
Recipe serves 3-4 as a main, more as a side.
